This is the perfect soup to make use of all the fresh watermelon you have on hand during the summer months. I have been making this chilled watermelon soup for years and there are many variations. I like to keep it simple and only use 5 ingredients: fresh watermelon, fresh lime and lemon juice, fresh mint, and just a touch of stevia.

This is another great low-calorie side to have when you are cutting back or even on intermittent fasting days.  Since a cup is only 54 calories!  It’s also a nice and cool option when the temperatures soar.  I am always looking for no cook options in the hot summers here in central Florida. The key to this soup is all the fresh ingredients which make the flavor really pop. You can also switch or add just a few ingredients and get a totally different taste. I have listed a few variations below.

I hate to waste food and sometimes we buy more fresh produce then our family of two can use up before it spoils. I usually make this soup or my Watermelon & Feta Salad to use up all of the remaining watermelon we have. This soup tastes wonderful even using watermelon that is towards the end of its freshness.  Since you blend up the soup, the consistency and texture will turn out fine and you won’t know the difference.

Variations:

Spicy Watermelon Soup

Add 2 teaspoons hot sauce or 1 tablespoon minced fresh jalapeno peppers to the soup.  Replace the mint with cilantro and garnish with diced avocado. 

Asian Watermelon Soup

Add 1.5 tablespoons grated ginger and a ¼ teaspoon Chinese 5 spice seasoning. Replace the mint with cilantro and garnish with chopped green onions.

Creamy Watermelon Soup

Add ½ cup of fat free vanilla Greek yogurt, 1 tsp grated ginger, and a dash of nutmeg.

Ingredients

  • 4 cups Cubed Watermelon
  • 2 tbsp. Fresh Lime Juice
  • 2 tbsp. Fresh Lemon Juice
  • 2 tbsp. Stevia in the Raw or sugar
  • 2 tbsp. Chopped Fresh Mint

Instructions

  • Place all the ingredients into a blender and blend into a smooth consistency.
